#FrannyCooks: Instant Pot Butternut Squash Mac and Cheese

So yesterday, I raved about my newest kitchen appliance -- the Instant Pot Duo 6QT  which I think is an answered prayer for all home cooks who are living in small spaces or are always on the go.  Of course, I wasted no time and started to put this baby on a road test. As soon as I got my Instant Pot , my mom told me that it's the perfect appliance to have given that I always make sure to have soup available for my kids in every meal. It's where we've made delicious beef soup, creamy pumpkin soup that L loves so much and a few months back, I discovered that you can also make pasta here without the use of multiple pots. It's truly your machine for those one-pot wonder dishes. Let me share with you one recipe that I've tried making using my Instant Pot and I was very pleased with the outcome. I know it has been a while since my last #FrannyCooks recipe and I'm really sorry about that! To say that this year has been busy and crazy is indeed an understatement. Actually our schedules just got so hectic starting the 2nd quarter of this year and it's just starting to ease off this month. There were just so many things happening all at the same time that at some point, both Paul and I felt like headless chickens running around as we're trying to get a lot of things done. The funny thing is, no matter how alike we can be, we apparently deal with stress very differently. He would resort to playing billiards or watching his favorite YouTube videos while I head to the kitchen to cook or I blog. Either way, we realized that we crave for some me-time to de-stress and we happily would give each other that much-needed space when needed. It has been a year since I've started using the hashtag #frannycooks on Instagram . I still remembered how I promised myself to cook more in 2015 and initially, I would prepare the safe dishes which are the ones that I can confidently prepare and are surely edible. Little by little, I've gained more confidence and creativity around the kitchen. I love surprising Paul with a newly created dish every now and then and I'm lucky that so far, he has liked them all. Recently, I had lunch with my colleague C and since I practice abstinence from meat every Friday in Lent, I had to choose among the seafood items in the menu. A few months ago, Paul and I had one of our impromptu lunch dates again and this time we had it at the Shangri-la Mall . Going around the mall while thinking of where to eat, we were faced with a big dilemma as there were quite a lot of options to choose from. The best way was to do it through the process of elimination. Since we both don't eat beef then all steak and burger places were immediately removed from the list. Paul wasn't in the mood to splurge so there goes the high-priced restaurants as well. However, I was feeling hungry (a.k.a. I want rice) so we skipped all sandwich bars and cafes in the mall. While searching for recipes to try in the web, I happen to stumble upon the Del Monte Kitchenomics website and I had a great time browsing through its interesting and helpful features. I really was looking for something new to try but what really sets me back from cooking lately is the time needed to prepare, cook and to serve. I have a very hectic schedule that I even have to make time to relax and unwind. However, I miss our kitchen and being able to cook up a storm for my family to enjoy. While browsing through the website, I found a couple of recipes that are time-friendly. Cool! They also have a section featuring recipes that won't go beyond P80! This, my mom would surely love as she will be able to whip up a dish that's very affordable and seems to be very delicious too! What a YUMMY-ful world!

I can't believe it's finally OUT!
