Chin Mee Chin Confectionery in East Coast Road

Happy #SG50! It was indeed a fun and relaxing long weekend that just passed and how I wish we can have more reasons to celebrate like this. So, on Singapore's National Day , all trains and buses gave free rides for the entire day and Paul and I took this opportunity to explore the other side of town -- the East. Our adventure started early in the morning where we took a 45 minute train ride all the way to Dakota MRT Station. This was followed by a quick bus ride to East Coast Road --  our first destination of the day. After attending Sunday mass, we checked out this famous old-school coffee shop which dates back to the 1920s! I first learned about Chin Mee Chin Confectionery when I saw a couple of random Instagram posts from fellow bloggers about it.

Good Morning Nanyang Cafe -- Best Modern Kaya Toast in Singapore

Back when I was still a kid, Papa would always call me " sleepyhead ." This is because it would take him almost half an hour to successful pull me out from bed especially on a school day. No amount of knocking, tickling, singing loudly, turning on the radio, opening the curtains would wake me up from my slumber. The truth is... I really do love to sleep. However, what Papa doesn't know is that there's just one way to quickly get me out of bed and that's what Mommy has mastered -- preparing a really delicious breakfast spread and making sure it reaches my senses. So on days when Mommy's in charge, she would whip up a mouthwatering spread of garlic fried rice, hotdogs and scrambled egg. I tell you, the scent of fried garlic alone is powerful enough to wake me up, to get ready in twenty minutes or less and to head straight to the dining room with a big smile on my face. Kaya Lovin' at Toast Box

This morning I woke up feeling a bit hungry. So, checking what's available in our pantry, I decided to recreate one of my local favorites here -- the famous Kaya Toast with Soft Boiled Egg. First, the egg. I carefully boiled a good amount of water and when it started to bubble, I put in the medium sized egg. I even set the timer to 5 minutes to make sure it comes out runny and cooked. After 5 minutes, I shocked it in icy water as taught to me by chef friends. Then, the grand moment finally arrived for me to de-shell the egg and to see if I did a good job. Well, let's just say it was a disaster! Paul just took one look at it and shook his head. *sigh* Feeling disheartened by the failed soft-boiled egg. I didn't even bother to make the Kaya toast. I just ate it with Wholemeal crackers. Days like this, I seriously wish I am a cooking diva. Making soft-boiled egg should be one of the easiest things to cook and yet it came out not as good as I wanted it to be. Guess, I just h...
